After an apprenticeship at the Poker d'As (Besançon, 25, Doubs), followed by experiences at the restaurants of the Eiffel Tower and the Montparnasse Tower (Paris, 75), Davy Ruffin returned to his home region, the Doubs. For 10 years, he owned a bistronomic restaurant in Besançon (25, Doubs). In 2022, he fell in love with the potential of La Truite de la Loue, which he bought and renovated to his taste.

This building in France, dating back more than 100 years, has become over the years a real institution and a landmark for the many travellers passing through the region!
